Hard Coat Pizza Pans Care Guide

Download the Hard Coat Pizza Pans Care Guide PDF

Preparation

To season the new pan wash in warm, soapy water and quickly dry. Then wipe oil on the inside and outside surfaces of the pan and allow it to soak for 30 minutes. After it has soaked bake it at regular temperatures. Do not over bake and do not wash off excess oil. Just wipe. The oil residue and any additional oil added before baking makes the pan stick-resistant.

Washing

Hand wash in warm water, a soft sponge and detergents made specifically for alluminium. Wipe dry immediately.

*Note: Do not expose the pans to a dishwasher, abrasive sponges, caustic cleaners, or acidic detergents.

Other Care Notes

  • If scoured, the pan will thin so use care when handling.

Pizza Pans/Screens Care Guide

Preparation

Prior to using aluminum pizza screens for the first time, a release agent or oil is recommended to prevent sticking.

Screens can also be seasoned by wiping oil on the surface of the pan and allowing the oil to soak for 30 minutes. Then bake the screen at regular cooking times and temperatures. Do not wash off excess oil – just wipe. The oil residue and any additional oil added before baking makes the screen stick resistant. The screen is now ready for use.

Washing

Aluminum pizza screens should be washed by hand using a mild detergent (preferably one made specifically for aluminum). After washing, pat the screen dry and store appropriately (see below). To insure proper sanitation, heat pan to cooking temperature in oven after each wash and then reapply release agent or oil to prevent sticking.

* Note: Do not expose aluminum screens to dishwashers or high alkaline / acidic detergents. Also, do not use abrasive pads as they can scratch the aluminum and create rust.

Other Care Notes

Storing the pizza screens in a pizza screen rack is recommended. The rack helps by protecting the screens from being accidentally bent and allows easy access within safe storage.

Pizza Stones Care Guide

Preparation

This “all-natural” stone requires no seasoning or conditioning. Simply rinse in warm water before first use and allow the stone to dry thoroughly. Most recipes suggest preheating stone 15-20 minutes for even cooking and to reduce baking time.

Preheat stone by placing cool stone in a cold oven. Heat oven to temperature indicated in recipe and place product on preheated stone as directed. Because stone retains heat, always wear oven mitts while handling. Place it on a serving rack to avoid heat damage to countertops or table surfaces.

Prepare pizza or other baked goods on a flat surface such as a cookie sheet or pizza peel. Lightly sprinkle stone with cornmeal and slide pizza or dough onto stone. Do not use flour as it will burn on the stone.

Care and Use

The stone is freezer, microwave and oven safe. To prevent cracking, avoid temperature extremes from direct to oven or from oven to cold water.

Do not place stone over an open flame, or in broiler. Do not cut directly on stone.

Before cleaning allow to cool completely. Then remove baked on foods and rinse in warm water. To avoid soapy aftertaste, do not use soap or detergent. Let stone air dry thoroughly before using again. Do not soak the stone or clean in a dishwasher.

The pizza stone will darken gradually and retain some staining with use. These are a part of the stone’s natural seasoning and will not harm it or affect the taste of food.

Handle the stone with care to prevent chipping or breaking.

Maximum Temperature for the Deluxe Pizza Stone is 600° C or 1,112° F.

Maximum Temperature for the Economy Pizza Stone is 300° C or 572° F.
